How to Make a Traditional Italian Ricotta Cheesecake

How to Make a Traditional Italian Ricotta Cheesecake

If you're a fan of desserts that balance sweetness with a creamy texture, then a traditional Italian ricotta cheesecake is a must-try. Different from the standard New York-style cheesecake, this Italian version is light, fluffy, and bursting with flavor. In this article, we’ll take you through the steps to create a delicious ricotta cheesecake that will impress your family and friends.

Ingredients

To make a traditional Italian ricotta cheesecake, you'll need the following ingredients:

  • 1 ½ cups of ricotta cheese
  • 1 cup of granulated sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of all-purpose flour
  • 1 teaspoon of lemon zest
  • 1/4 cup of heavy cream
  • 1 pre-made graham cracker or pastry crust (optional)
  • Powdered sugar (for dusting)

Instructions

Step 1: Preheat the Oven

Start by preheating your oven to 350°F (175°C). This allows the cheesecake to bake evenly while you prepare the batter.

Step 2: Prepare the Crust

If you are using a store-bought graham cracker or pastry crust, simply place it in a 9-inch springform pan. If you prefer making your own crust, mix together 1 ½ cups of crushed graham crackers, 1/2 cup of melted butter, and 1/4 cup of sugar. Press the mixture into the bottom and up the sides of the pan firmly.

Step 3: Blend the Ricotta Mixture

In a large mixing bowl, add the ricotta cheese. Using an electric mixer, blend it until it’s smooth and creamy. This step is crucial for a velvety texture.

Step 4: Add the Other Ingredients

Gradually add in the sugar, and mix until combined. Next, add the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then, mix in the vanilla extract, lemon zest, flour, and heavy cream. Continue mixing until everything is well blended and smooth.

Step 5: Pour into the Crust

Pour the ricotta mixture into the prepared crust, smoothing the top with a spatula. Make sure to spread the batter evenly to ensure consistent baking.

Step 6: Bake

Place the cheesecake in the preheated oven and bake for about 50-60 minutes. The cheesecake is done when the edges are set but the center still has a slight jiggle. Remember, it will continue to firm up as it cools.

Step 7: Cool and Refrigerate

Once baked, turn off the oven and leave the cheesecake inside for about 1 hour to cool slowly. This will prevent cracks from forming. After an hour, remove it from the oven and let it cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Step 8: Serve

When you’re ready to serve, carefully remove the cheesecake from the springform pan. Dust the top with powdered sugar for a classic presentation. You can also add fresh berries or a drizzle of honey for extra flavor.

Tips for the Perfect Ricotta Cheesecake

  • Use quality ricotta for the best flavor—homemade or from a local Italian market is ideal.
  • For a richer flavor, substitute part of the ricotta with cream cheese.
  • Let your cheesecake cool completely in the fridge before serving to improve its texture.
  • Feel free to experiment with toppings such as fruit compote, chocolate sauce, or caramel.

Enjoy making this traditional Italian ricotta cheesecake at home! With its creamy texture and delightful flavor, it’s sure to become a favorite dessert in your household.
